#vodka #vodkarecipe #philbillymoonshine We take a bunch of potatoes and make vodka with them. This recipe is very good, and simple to make apart from the straining part of it. We used 40 pounds of potatoes 5 pounds of malted barley, and 15 pounds of sugar to make this vodka, and it turned out excellent. To get a distinct taste i chose to use 4 different kinds of potatoes, and i think i made the right decision because it is delicious. 🤍
I have wanted to make potato vodka for a long time. Why I'm not entirely sure, I guess I just like to try different things. It turns out potatoes vodka tastes great. A little different, but interesting and unique. This new video using Sweet Potato is even better: 🤍 If you want to make your own you can follow this recipe: 20 kg (44 lb) of high starch, or roasting potatoes. Brushed not peeled. 5.5 kg (12 lb) of crushed malted barley Plenty of water (present to drink water) 3 tablespoons of bakers yeast (I used "Angel") Put the potatoes into a large pot and steam them for 45 min (or until tender and easily crushable) Mash well Add 8-10L of water ( 2.1 - 2.6 gal) Mix well and ensure all larger pieces of potato are crushed Slowly mix in the malted barley Gently bring the temp up to 63 c (146 f) Let mash for one hour (or until you pass the starch test) Cool to pitching temp 25c ( 77 f) Pitch the yeast and ferment at 25c Let ferment go until fermented out. Optionally let the ferment sour slightly by waiting another 1-3 days. Strip distil the whole batch (you will either need to strain the wash first or use a suitable still to distil on the grain) Distil the low wines with 3-4 plates or reflux still. Add the rice hulls last to aid with draining. Heat up the water to 113F(45C) for a beta glucan rest to cut the goopiness of the rye. Hold at this temp for 30 minutes. 2. Raise the temp to 132F (55C) and do another rest, holding the mash at this temperature for an additional 30 minutes. This will also help reduce the goopiness of the rye and wheat. 3. Now raise the temp of the mash to 150F (65C) and hold for 60-90 minutes to allow the malt enzymes to convert all the starch into sugars. 4. Strain off the grain and sparge with a few quarts (Liters) of hot water to rinse out the residual sugars if desired. 5. Cool the wort to 80F(26C) then pitch your yeast and let the wash ferment for 7 days, or until the hydrometer reading is 1.000 or lower. 6. Hypothetically, this can be distilled 2 times in a pot still to make Horilka. At which point you can enjoy it cool, not too cold with some smoked meats, fish and pickled vegetables. 7. You could also make a very tasty and popular variety of Horilka buy adding a few fresh red chilies and a touch of honey to the spirit. Recipe for that variation on my Patreon page. I'm a lucky man! Teddysad totally hooked me up with a care package to kick of my first "real" wash. Teddsads fast fermenting vodka (FFV, TFFV) seemed like a great option for my first wash. It ferments out dry FAST, like 3-4 days fast. It has a slight wheat flavor (like gray goose or absolute) and is pretty cheap. As well as the recipe pack Ted gave me a bunch of advice on how to get the most out of this recipe. Hopefully I can do it justice! Smooth, easy to drink with an interesting herbaceous sweet potato flavor that actually reminds me of Tequila. Suggested "easy" mash recipe: Grate 13kg (28.6 lb) of Sweet potato / Kumera Add it into a pot with enough water to cover it Add in high temp alpha enzymes (HTA) Bring it up to 92c (197.6 f) (or as high as your HTA will go) Mash for 1-2 hours Suggested "efficient" mash Recipe: Grate 13kg (28.6 lb) of Sweet potato / Kumera Add sacrificial HTA enzymes Bring up to a boil and simmer for 45min Cool back down to 92c (197.6) Add more HTA and mash for 1-2 hours until a starch test is passed Fermentation Collect all the clear wash, and optionally press the sweet potato / Kumera to get a little more out Alternatively, ferment on the vegetable and squeeze after fermentation Pitch your yeast of choice, I used an M-1 whiskey yeast Ferment until all signs of fermentation are finished and gravity has dropped near or below 1. Distillation Distill all of the wash with a stripping run. This is likely quite low ABV so I suggest running LOW (1-4% off the still) Re distill the low wines in a reflux still. The higher the ABV the still is "capable of" the better. So I wanted to start a mission to change that. Enter the Barley and Wheat vodka! MOSTLY all-grain (there is a little sugar in there too) and distilled on 8 plates. The Recipe (rough numbers on grain) 17 kg (37.4 lb) Wheat 13 kg (28.6 lb) Unmalted Barley 3kg Sugar (dose at your desired rate, I pushed it up to 1.071) Cook: Fill a large pot just under halfway with the milled grain. Fill pot to the top with boiling water And a small amount of HTA in to keep it thin Start heating and bring to a simmer Simmer for 30min Add to the fermenter and insulate Mash: Get temp down to prescribed temp for your HTA enzymes Dose with enzymes Cover and insulate for 2 hours Cool to prescribed Glucoamalayse temp Dose with the prescribed amount Cover and insulate overnight Ferment: Cooldown to pitching temp 30 c (86 f) Pitch 40 g (1.4 oz) of yeast (I used angle AG-1) Distil: Separate the grain from the liquid. But can we improve on it by adding more sugar and changing out the flavouring ingredients? What is the best homemade vodka recipe? How do you get more alcohol? The Recipe for 180 L total wash: This yielded 13L at 95 % ABV : 3.4 gal at 190 proof 1.8 kg / 3.9 lb Wheat Bran 2.2 kg / 4.8 lb Kibbled Wheat 2.2 kg / 4.8 lb Kibbled Rye 50 kg / 110 lb sugar (1.100 starting gravity) (I would strongly suggest dropping that to more like 1.070 - 1.080) 2 t of DAP 🤍 1/2 t of Epsom Salts 🤍 400 g / 14 oz Bakers Yeast (I used Angel) Air Pump: 🤍 Starsan Sanitizer: 🤍 Mash Paddle: 🤍 I realised after recording this that the genio is likely calculating the % abv left in the wash using the temp of the boiling liquid and the pressure of the boiler. Unfortunately, to do so it would need to assume that there is only water and alcohol in solution. Because I had unfermented sugar left in the wash this would have been thrown out. This is likely when the product seemed so clean so "deep into the run". In saying that I yielded about what I expected in terms of product. This episode is Part 1 where we're going to ferment a high alcohol sugar wash. In part 2, tomorrow, we will distill it using the stock pot distilling technique we looked at in the previous distilling episode. Vodka is by definition pure ethanol in water... it has not distinctive smell or flavor. However, this only true for vodkas that have been distilled using refraction, or column stills. When vodka is distilled using a pot still, or in this case a stock pot still, a portion of the aroma and flavor of the fermented liquid does pass on to the distilled product. This will give every different type of pot stilled vodka its own distinctive taste and aroma. We are going to make a fermented sugar wash which ideal for producing vodka. Sugar wash has become increasingly popular with distillers as it produces no methanol, and insignificant quantities of fusel oils. It is the perfect wash for beginner distillers, and especially when using a stock pot still where it is really inconvenient trying to remove heads and tails during the process. Wheat vodka, the recipe of home brew with wild yeast Ingredients: Summer hard wheat(washed) - 3 kg Sugar - 3 kg Water - 15 l. Cooking process: First of all make a come-through For 3 kg of wheat u need 3 l of water and 600 g of sugar, so u gotta make syrup and let it simmer down till room temperature. Pour wheat into the enamel or glass recipient (before it wash it from dust), pour in with warm syrup and leave it uncovered for about 5 days. When u notice carbonization, foaming and sour smell pour the come-through into the fermentation tank and pour in with syrup: 2,4 kg of sugar and 12 l of water. Pour out syrup into the fermentation tank. Fermenting of the brew:. Mount onto the fermentation tank the waterlock and leave it in dark room. It’s fermenting from 5 days to 2 weeks depending on the temperature. You must carefully observe the brew, because it can turn sour. You must taste it, shake and when carbonizing is over, the corn will go to the bottom of the fermentation tank. To the taste it will be dry - so it’s sign for distilling. Distilling must be done in two stages: the first - quickly without extracting of foreshots and tails, and the second - slowly with extracting of fractions. Banana Vodka, Banana Rakjia etc. But at the end of the day, this is something I would completely recommend trying. The recipe is written out below in both metric and imperial and 20 and 40L batches. This will make around 2-3 L of banana brandy depending on your cuts and how far down you proof the final spirit: 5 kg / 11 lb of ripe bananas 4 kg / 8.8 lb of oven-cooked bananas 1 kg / 2.2 lb of pan-fried bananas (with 2 tablespoons of brown sugar) 2 kg 4.4 lb of sugar inverted by simmering for 20 min with 2 teaspoons of citric acid 20 g / 0.7 oz of yeast (I used Still Spirits Distiller Series Rum Yeast and Lalvin EC1118) Yeast nutrient as per instructions 40 L / 10.6 gal batch. This will make around 4-6 L of banana brandy depending on your cuts and how far down you proof the final spirit: 10 kg / 22 lb of ripe bananas 8 kg / 17.6 lb of oven-cooked bananas 2 kg / 4.4 lb of pan-fried bananas (with 4 tablespoons of brown sugar) 4 kg / 8.8 lb of sugar inverted by simmering for 20 min with 4 teaspoons of citric acid 40 g / 1.4 oz of yeast (I used Still Spirits Distiller Series Rum Yeast) Yeast nutrient as per instructions Oven Cooked Bananas: Spread them out on a backing or roasting sheet. Cook for 15-25 min at 160 c / 320 f until the skin is totally black and some of the bananas are splitting. Pan-Fried Banana: Cook in a medium pan with a little butter until you start developing some colour. Add brown sugar and continue cooking until completely cooked through. Making the Wash: Combine the ripe, oven-baked and pan-fried bananas into a large budget or pot. Add the inverted sugar and immediately top up with cool water (To the total volume of batch size). Blitz with an electric drill and paint mixer until a baby food consistency is achieved. Fermenting: Add yeast nutrient and yeast and ferment at 25c. Knock the fruit cap down daily. Distilling: Distil 3/4 or a little more of the wash as a stripping run. Run fast and collect down to 5-15% abv. Return the low wines and remaining wash to the still and perform a spirit run. Ingredients 3 tbsp butter 1 shallot, minced 2 gloves garlic, minced 1/2 cup tomato paste 1/2 tsp crushed red pepper 1 shot of vodka salt to taste 1 lb. tubed pasta, such as penne or rigatoni 1/2 cup heavy cream 1/2 cup grated Parmesan, plus more for serving Basil for serving Follow me! Cook pasta. Reserve cup of pasta water. Fry shallot and garlic in a skillet over medium heat with butter. Add tomato paste and red pepper flakes and cook until fully coated. Add vodka, 1/3 cup of pasta water and heavy cream and combine. Add half the Parmesan and stir until melted. Turn off heat and add cooked pasta. Fold in remaining Parmesan, pasta water if needed and salt. Serve topped with more Parmesan and basil.
